- 500g frozen fruit of choice (we're using raspberries)
- 500g sugar
- 1 ½ tsp lemon juice
Place the raspberries and lemon juice in a medium pot. Stir over a medium heat until the fruit is mushy. Stir in the sugar, stirring constantly until sugar is dissolved. Brush down the sides of the pot with water so your jam doesn’t crystalize. Boil, stirring occasionally, until set. Roughly 20mins.
To test for set, place a small plate in the freezer before starting, pour a small amount of jam onto the plate and return to the freezer for 1 minute.
Run your finger through the jam and if a skin forms on your finger and the jam doesn’t run back together then its set. Pour into sterilized jars.
