- 3 cups flour
- ½ cup brown sugar
- 5 tsp baking powder
- ½ tsp salt
- 2 Tbsp mixed spice
- 2 tsp cinnamon
- 1 tsp ground cloves
- 80g butter
- ¼ cups mixed peel
- 1 cups raisins
- 2 eggs
- 1 cup milk
- ¼ cup flour (for mix)
- ¼ cup water
Combine 3 cups of flour, sugar, baking powder, salt and spices in a large bowl.
Rub in the butter until mixture resembles fine breadcrumbs.
Stir through the raisins and mixed peel.
Whisk eggs and milk together then quickly mix into dry’s to form a dough.
Tip out onto a floured bench and press into an even rectangle roughly 30x15cm (it doesn’t need to be exact).
Cut the dough into 12 equal pieces then transfer to a floured baking tray. Mix the second measure of flour together with ¼ cup of water to form a paste.
Pour mixture into a piping bag and pipe crosses onto the top of each scone. Bake for 20-25mins at 150°C. Serve with lashings of butter.
