- 5 Tbsp flour
- 2 Tbsp sugar
- 1 heaped tsp baking powder
- 1 egg
- 2 Tbsp milk
- 3 c oil for frying
- 2Tbsp sugar
- ¼ tsp cinnamon
Heat oil in a medium pot to 180°C. (If you don't have a thermometer, place the handle of a wooden spoon in the oil, when you see bubbles around the spoon, the oil has reached temperature. See image below – thanks Lifehacker for the pic!)
Turn the heat down to medium-low to maintain temperature. While oil is heating, whisk the flour, sugar (first measure) and baking powder together.
Beat the egg and milk together and add to the dry ingredients, mixing well.
Carefully drop 1 tablespoon of mixture into the hot oil one at a time and fry on both sides for 1-2 minutes until a golden brown colour is reached. You will need to do this in two batches.
Remove from the oil and place on a paper towel to drain for a minute. Toss in a mixture of caster sugar and cinnamon.
Serving suggestions include dipping in chocolate sauce, drizzling with salted caramel or our favourite... Served hot with hokey pokey ice cream.
